Yes, Deviled Eggs Are Keto!

Don’t let the simplicity of this recipe fool you. With easy straight-forward ingredients, these deviled eggs are identical to the ones I remember devouring every summer at my Grandma's house. She made them whenever there was celebration or gathering and they were always quickly gobbled up.
If you’re following a keto diet there’s no need to save these yummy bites for picnics or special occasions. They make the perfect grab-n-go keto snack or a super satisfying keto lunch when paired with one of our famous Keto Picnic Bowls.

You’ll find these beauties in my refrigerator at least twice a month and they typically vanish by the end of the day, but they will keep for 2-3 days chilled in an air-tight container. Of course, make sure never to re-refrigerate deviled eggs that have reached room temperature as they sometimes do when left out during parties and picnics.
To make preparation easy and convenient I highly recommend using a counter-top egg cooker. They make perfect boiled eggs every time with just the touch of a button and are very affordable.
Also, check out this video (starting at 1:49) on the best way to easily peel boiled eggs. The trick is to place your freshly boiled eggs in a bowl of room temperature water and replace the water every minute or so which allows the eggs to gradually cool to room temperature. Then finish by immersing the eggs in ice water for an additional 10 minutes, peel immediately and enjoy.
This way of cooling boiled eggs down always seems to make them much easier to peel regardless of how fresh the eggs are or what cooking method I use.
Ingredients:
6 large pasture-raised eggs, hard boiled
1 teaspoon Dijon mustard
3 Tablespoons avocado mayonnaise
Salt and pepper to taste
Paprika and chopped chives as optional garnish
Directions:
Slice chilled boiled eggs lengthwise. Remove and place yolks in a separate bowl.
Mash egg yolks with a fork until smooth and free of lumps. Add mustard, mayonnaise, salt and pepper, and incorporate into mashed yolks until creamy and smooth.
Fill each egg white with 1 to 2 teaspoons of egg-yolk mixture. Lightly dust each egg with paprika and garnish with fresh chopped chives if desired.
Refrigerate until thoroughly chilled before serving.
