Keto French Toast Casserole (Panosh)

Not your ordinary Keto egg loaf, I named this dish "Panosh" because it's made in a "pan" and is the perfect "nosh" any time you need a comfort food fix! With the consistency of a soft yummy muffin and the family friendly flavor of French Toast, it makes an exquisite breakfast casserole, sweet mid-day snack, or anytime Keto meal.

Level up your plain old bacon-n-eggs with this crowd pleasing recipe. Panosh is versatile, keeps in the refrigerator up to 4 days, (great for meal prep!) is completely gluten free and Keto friendly. Portion out for the perfect grab-n-go meal ~ Enjoy!
INGREDIENTS:
8 oz cream cheese (room temperature)
1 Tablespoon cinnamon
2 teaspoons vanilla extract
4 Tablespoons monk fruit sweetener
1 teaspoon baking powder
4 Tablespoons butter (melted)
1/4 teaspoon sea salt
DIRECTIONS:
Preheat oven to 350°F
Place all ingredients into a blender. Mix until well incorporated. Batter will be very thin.
Pour batter into an 8x11 baking dish lined with parchment paper.
Bake at 350°F for 30-40 minutes. Test with a clean knife and adjust baking time accordingly.
Optional: Sprinkle with Swerve confectioner's sweetener.
Tip: Less time will make the dish more of a flan consistency.
Serve hot or store in the refrigerator to enjoy later.
