Keto-Friendly Tequilaberry Salad

No, there are no berries or tequila in this amazing keto-friendly salad, but if you are familiar with the history behind this dish, you know how utterly addictive it is.


This signature salad, made famous by the now closed Tequilaberry Restaurant in Coon Rapids, Minnesota, converts perfectly into a delicious keto salad with just a few tweaks. The combination of flavor and texture has made it one of my favorite new finds.

INGREDIENTS:


1 head organic iceberg lettuce, chopped

1 head organic cauliflower, coarsely chopped

1 lb uncured no-sugar bacon, fried and chopped

1 cup parmesan cheese


Salad Dressing

3/4 cup avocado mayonnaise

2 Tablespoons apple cider vinegar

2 Tablespoons monk fruit sweetener


DIRECTIONS:


Add chopped lettuce, cauliflower, bacon, and parmesan cheese to a large mixing bowl.


Into a medium mason jar (with a tight-fitting lid) add mayonnaise, vinegar, and sweetener. Shake until mixed well and pour over salad. Stir salad until well incorporated.


Place mixed salad in the refrigerator to chill for 30 minutes. Salad can be stored in the refrigerator for 3-4 days.
