Tuscan Chicken Stew: Crockpot

Tuscan Chicken Stew: Crockpot
Ingredients
8 bone-in chicken thighs
1 tablespoon olive oil or butter
6 cloves garlic, minced
1 cup heavy cream
1/3 cup chicken broth
3/4 cup grated parmesan cheese
1 tablespoon Italian seasoning
1 teaspoon crushed red chili pepper flakes
Sea salt and fresh cracked black pepper
1/2 cup chopped Sun-dried tomatoes
2 cup frozen chopped Spinach

Directions
Sauté chicken thighs in oil or butter in a deep saucepan over medium heat until lightly browned. Add garlic and continue to sauté until golden brown.
Remove chicken from mixture and add the cream and chicken broth and bring to a light boil then reduce heat to simmer for 10 minutes or until sauce has slightly thickened .
Place chicken thighs at the bottom of your crock pot. Season with Italian seasoning, crushed red chili pepper flakes, sea salt, and black pepper and top with chopped sun-dried tomatoes.
To your cream sauce, gradually add Parmesan cheese,, lower the heat and whisk until smooth. Adjust cream sauce to taste.
Pour cream sauce over chicken and cook in crockpot on low for 6 hours or on high for 4 hours.
When chicken is done (dropping off the bone) remove all bones and shred chicken to make a stew. Add spinach and cook until warmed through, about 5 to 8 minutes. Serve hot with freshly grated Parmesan cheese.
