Keto Buffalo Chicken Dip

This quick and easy snack is one of my favorites. Try the short version which requires only 4 ingredients and just 8 minutes on the stove or opt for the fancier party-worthy dip that even your non-keto friends will love!

For a quick grab-n-go lunch or snack, stuff a few leaves of Romaine lettuce, or use sliced cucumbers or celery sticks for dipping.


Ingredients:


QUICK 8-MINUTE VERSION:

1 16 ounce can of chicken breast, drained and shredded

8 ounces cream cheese

1/2 cup sour cream


FOR THE FANCY PARTY VERSION ADD THESE INGREDIENTS:

1 cup shredded mexican blend or cheddar cheese

1 finely chopped green onion

2 Tablespoons blue cheese crumbles


Directions:


QUICK 8-MINUTE VERSION: Add drained chicken to sauce pan with hot sauce. Cook on medium until thoroughly heated. Add cream cheese in chunks and stir until completely melted. Remove from heat and stir in sour cream. Season to taste. Enjoy hot or cold!


FANCY PARTY VERSION: Add drained chicken to sauce pan with hot sauce. Cook on medium until thoroughly heated. Add cream cheese in chunks and stir until completely melted.


Remove from heat, stir in sour cream and transfer mixture to a oven-safe dish. Top with cheese and bake @ 400 degrees F until golden brown (about 25 minutes. Top with blue cheese crumbles and green onion.

Calories: 248 per serving

Fat: 18.3g

Carbohydrate: 2.9g

Protein: 14.6g


MACROS FOR FANCY PARTY VERSION: (6 oz serving - recipe makes 7 servings)

Calories: 302 per serving

Fat: 22.7g

Carbohydrate: 3.6g

Protein: 17.6g
