Columbia Restaurant's Original "1905" Salad

In 1905, history was made when the famous Columbia Restaurant opened it doors in the Ybor City section of Tampa, Florida. For more than 100 years, this amazing salad has stood the test of time, and is still a restaurant favorite today.
It’s unique blend of cold iceberg lettuce, ham, Swiss cheese, and Spanish olives, served with a dressing that has become a staple in my kitchen, makes it the perfect Keto salad…who knew!
I have used the dressing to marinate chicken, fresh mushroom buttons, and have even combined it with my homemade blue cheese dressing for an amazing wedge salad.
Leftovers store well overnight, so make a big batch and enjoy!
SALAD DRESSING INGREDIENTS
1/4 cup white wine vinegar
1/2 cup extra-virgin Spanish olive oil
4 garlic cloves, minced
1 Tablespoon Worcestershire sauce
1 1/2 teaspoon dried oregano
2 teaspoons fresh lemon juice
salt & freshly ground black pepper to taste
SALAD INGREDIENTS
1/2 head iceberg lettuce, shredded
2 ripe tomatoes, cut into eighths
1/2 cup sliced Swiss cheese, cut into julienne strips
1/2 cup sliced baked ham, cut into julienne strips
1/4 cup pimento stuffed Spanish olives
1/4 freshly grated Romano cheese
Toss together all salad ingredients in a large bowl, except Romano cheese.
Mix garlic, oregano, and Worcestershire sauce in a bowl. Beat until smooth with a wire whisk. Add olive oil, gradually beating to form an emulsion. Stir in vinegar and lemon juice and season with salt and pepper.
Add dressing to salad and toss well. Add Romano cheese and toss one more time.
