Cheesy Veggie Keto Casserole

Use any vegetable you like and any combination of your favorite cheeses. I like using a cauliflower & broccoli together, with swiss, cheddar, and goat cheese. This is a must-have recipe in our Keto kitchen and always receives rave reviews.

Keto Veggie Casserole

Using frozen broccoli and/or cauliflower can make this recipe much easier and faster to prepare. Two 14-oz bags will work in either a 12x12 or a 8x11 baking dish.

Hot pepper flakes are optional and if you are not fond of goat cheese, any other tart cheese will work just fine. I found combining 3 different cheeses produces the richest flavor, but if you only have cheddar, your dish will still come out delicious!


Cheesy Veggie Keto Casserole


Ingredients


  • 1 large head of cauliflower, cut into florets or two 14-oz bags of frozen broccoli or cauliflower, cooked until slightly tender

  • 1 egg, beaten

  • 2/3 cup heavy whipping cream

  • 1 Tablespoon melted grass-fed butter

  • 1 cup organic sour cream

  • 1 tablespoon baking powder

  • 2 teaspoons paprika

  • 1/2 teaspoon salt

  • 1 teaspoon pepper flakes

  • 6 oz goat cheese

  • 2-3 strips crispy bacon, chopped

  • 1 cup shredded cheddar cheese

  • Freshly ground pepper


Directions

  1. Preheat to 375°F and line a 12x12 or 8x11 baking dish with parchment paper.

  2. Steam or pan roast cauliflower florets until tender, about 10 minutes. Drain well and pat dry with paper towels to remove as much moisture as possible (this prevents the casserole from becoming soggy!)

  3. Combine beaten eggs, butter, cream, sour cream, baking powder, and spices in a bowl and whisk until smooth.

  4. Place dried, cooked cauliflower in a baking dish lined with parchment paper, dot with sliced goat cheese evenly over the entire casserole. Add freshly ground pepper to taste.

  5. Pour sour cream mixture over cauliflower, top with bacon bits and cheddar cheese.

  6. Bake for 45 minutes or until golden brown.
